Spicy BBQ Meatballs

Ingredients
1 (7 oz) can chipotle peppers in adobo sauce
1 (16 oz) pkg Ground Pork Sausage
1/2 cup plain breadcrumbs
1 egg, beaten
2 tsp barbecue seasoning
1/2 tsp black pepper
3/4 cup barbecue sauce
2 Tbs unsalted butter
Directions
- Remove 3 peppers from the can, and chop finely.
- Reserve the liquid from the can for the sauce.
- In a large bowl, add pork, chipotle peppers, breadcrumbs, beaten egg, barbecue seasoning and black pepper.
- Using your hands, combine the mixture thoroughly.
- Refrigerate for 1 hour.
- Preheat oven to 400° F. Spray a rimmed baking sheet with nonstick cooking spray.
- Using a 1 1/2-inch scoop, shape the meat into balls.
- Place on the baking sheet.
- Bake for 15 to 20 minutes or until instant-read meat thermometer inserted into middle of a meatball reads 170° F.
- In a skillet over low heat, combine barbecue sauce, butter and 3 tablespoons of liquid from can of peppers.
- Stir until butter is melted and sauce is heated through. Taste, and add more chipotle liquid if desired.
- Add meatballs.
- Stir to coat. Serve from skillet over low heat, or transfer to a slow cooker to keep warm.
