Spicy BBQ Meatballs

Ingredients
1 (7 oz) can chipotle peppers in adobo sauce
1 (16 oz) pkg Ground Pork Sausage
1/2 cup plain breadcrumbs
1 egg, beaten
2 tsp barbecue seasoning
1/2 tsp black pepper
3/4 cup barbecue sauce
2 Tbs unsalted butter
Directions
  1. Remove 3 peppers from the can, and chop finely.
  2. Reserve the liquid from the can for the sauce.
  3. In a large bowl, add pork, chipotle peppers, breadcrumbs, beaten egg, barbecue seasoning and black pepper.
  4. Using your hands, combine the mixture thoroughly.
  5. Refrigerate for 1 hour.
  6. Preheat oven to 400° F. Spray a rimmed baking sheet with nonstick cooking spray.
  7. Using a 1 1/2-inch scoop, shape the meat into balls.
  8. Place on the baking sheet.
  9. Bake for 15 to 20 minutes or until instant-read meat thermometer inserted into middle of a meatball reads 170° F.
  10. In a skillet over low heat, combine barbecue sauce, butter and 3 tablespoons of liquid from can of peppers.
  11. Stir until butter is melted and sauce is heated through. Taste, and add more chipotle liquid if desired.
  12. Add meatballs.
  13. Stir to coat. Serve from skillet over low heat, or transfer to a slow cooker to keep warm.
